Method
Follow each step in order. Ingredient names are highlighted as you go.

Combine the all-purpose flour, turmeric powder, baking powder, and salt in a bowl.

Rub in the vegetable shortening and salted butter until the mixture looks like coarse crumbs.

Add the cold water and mix just until a dough forms. Wrap and chill while you prepare the filling.

Heat the vegetable oil in a pan over medium heat. Add the onion and cook until softened.

Add the garlic and scotch bonnet chili, and cook briefly until fragrant.

Add the ground beef and cook, breaking it up. Stir in the curry powder, allspice, fresh thyme, black pepper, and salt, and continue cooking until the beef reaches 71°C (160°F).

Stir in the tomato paste and water. Simmer until slightly thickened, then add the breadcrumbs and cook until the filling holds together. Spread the filling on a tray and cool before assembling the patties.

Heat the oven to 200°C (400°F). Roll out the dough and cut it into rounds.

Place some filling on one half of each round, fold over, and crimp the edges closed. Brush the tops with the egg.

Bake until the patties are golden and crisp.
