Fish
- 600gTuna (cut into equal portions)
- 250mlVegetable Oil
- 6gSalt
- 2gBlack Pepper

Method

Sprinkle the acheke with the water, toss gently, and steam until hot and fluffy.

Season the tuna with the salt and black pepper.

Heat the vegetable oil in a deep pan to 175°C (350°F).

Fry the tuna until golden and the center reaches 63°C (145°F), then drain well.

Arrange the onion and tomato in a bowl and set out the hot sauce and lime wedges.

Serve the warm acheke topped with the fried tuna, and let everyone finish the plate with the onion, tomato, hot sauce, and limes.
