Method
Follow each step in order. Ingredient names are highlighted as you go.

Brew the ground coffee with the water until strong, then strain it and let it cool completely.

Whisk the pasteurized egg yolks with the white sugar until pale and thick, then mix in the mascarpone cheese until smooth.

In a separate bowl, whisk the pasteurized egg whites until stiff peaks form, then gently fold it into the mascarpone mixture.

Dip the savoiardi biscuits briefly in the cooled coffee and arrange them in a single layer in a dish.

Spread part of the cream over the biscuits, then repeat with another layer of dipped savoiardi biscuits and the remaining cream.

Cover and refrigerate the tiramisù promptly for at least 4 hours. Dust with the cocoa powder just before serving.
