Fruit Soak
- 350mlBlack Tea (strong and cooled)
- 300gRaisin
- 90gCandied Orange Peel

- 100gBrown Sugar
- 300gAll-Purpose Flour
- 10gBaking Powder
- 5gMixed Spice
- 1pcsEgg (beaten)

Method

Combine the black tea, raisins, and candied orange peel, cover, and leave for at least 8 hours.

Preheat the oven to 170°C (340°F) and line a loaf tin.

Mix the brown sugar, all-purpose flour, baking powder, and mixed spice in a large bowl.

Add the soaked dried fruit together with its black tea, then stir in the egg to make a thick batter.

Spoon the batter into the prepared tin and level the top.

Bake at 170°C (340°F) until the loaf is well risen and a skewer inserted in the center comes out clean.

Cool in the tin briefly, then transfer to a rack and let the loaf cool completely before slicing.
