Method

Melt the unsalted butter in a heavy pot over medium heat. Add the onion, leek, and celery and cook until softened without browning, about 8 minutes.

Stir in the all-purpose flour and cook for 1 minute. Gradually whisk in the fish stock, then add the potato and bay leaf.

Bring to a gentle simmer and cook until the potato is nearly tender, about 12 to 15 minutes.

Add the haddock and cod. Simmer gently until the fish is opaque, flakes easily, and reaches 63°C (145°F), about 5 to 8 minutes.

Reduce the heat to low and stir in the heavy cream. Warm gently without boiling, then season with the salt and black pepper.

Remove the bay leaf, stir in the fresh parsley, and serve hot.
