- 250gKale (finely chopped)
- 300mlWhole Milk
- 60gSalted Butter

Method
Follow each step in order. Ingredient names are highlighted as you go.

Bring the water to a boil in a large pot, add the potato, and cook until almost tender.

Add the kale to the pot and continue cooking until the potato and kale are tender, then drain well.

Warm the whole milk with the salted butter.

Return the potato and kale to the warm pot briefly so excess moisture evaporates, then mash until smooth.

Beat in the warm milk mixture, fold in the scallion, and season with the salt and black pepper.

Serve hot with the salted butter melting over the colcannon.
