Place the grated potato in a clean cloth and squeeze out as much liquid as possible.

Put the potato in a bowl and mix in the all-purpose flour, salt, and black pepper.

Stir in the egg and buttermilk to make a thick batter.

Heat a little of the vegetable oil in a frying pan over medium heat.

Spoon portions of batter into the pan and flatten them gently.

Cook until the underside is deep golden, then turn and cook the other side until the pancakes are crisp on the outside and cooked through.
