Method

Place the back bacon in a large pot and cover with the water. Bring it to a gentle simmer.

Simmer the back bacon over low heat until tender and the centre reaches at least 63°C (145°F), then allow a 3-minute rest before slicing.

Add the potato to the pot and cook until almost tender, then add the green cabbage and continue cooking until both are soft.

Season the bacon, potato, and green cabbage lightly with the salt and black pepper.

Melt the unsalted butter in a saucepan over medium heat.

Stir in the all-purpose flour and cook for a minute, stirring constantly.
