Method

Pat the carp dry and score the thicker parts so it cooks evenly.

Mix the salt, turmeric powder, cumin powder, sumac, and garlic into a paste, then rub it all over the carp.

Heat a grill, broiler, or oven to 240°C (465°F). Cook the carp until browned at the edges and the thickest flesh reaches 63°C (145°F).

Let the fish rest briefly so the juices settle.

Arrange the red onion, fresh parsley, lemon, and pita bread alongside the fish and serve immediately.
