    Boil the potato in the water until tender, then lift it out and slice it. Blanch the green beans and carrot in the same water until just tender, then cool them. Briefly blanch the bean sprouts and drain.

    Arrange the romaine lettuce, cucumber, potato, green beans, carrot, bean sprouts, eggs, and rice cake on a platter or in serving bowls.

    Combine the peanut butter, coconut milk, and water in a saucepan over low heat and stir until smooth.

    Add the tamarind paste, palm sugar, soy sauce, sweet soy sauce, chili powder, garlic, and salt, then cook gently until the sauce is thick enough to spoon.

    Remove the sauce from the heat and stir in the lime juice.
