Rice

    Basmati Rice (rinsed)
  • 700ml
    Water
  • 10g
    Salt

Vegetable Masala

  • 220g
    Onion (thinly sliced)
  • 200g
    Tomato (finely chopped)
  • 150g
    Carrot (cut into cubes)
  • 150g
    Green Peas
  • 10g
    Biryani Masala
  • 2g
    Turmeric Powder
  • 45ml
    Ghee

Saffron

  • 200mg
    Saffron Threads
  • 60ml
    Water (warm)

    Steep the saffron threads in the warm water until the colour deepens.

    Bring the water to a boil at 100°C (212°F). Add the salt and basmati rice and cook until the rice is almost tender but still firm in the center. Drain and set aside.

    Heat the ghee in a heavy pot over medium heat.

    Add the onion and cook until deep golden.

    Stir in the tomato, turmeric powder, and biryani masala, and cook until the masala thickens.

    Add the carrot and green peas and cook until they begin to soften.

    Spread the par-cooked basmati rice over the vegetable masala in an even layer.

    Drizzle the saffron water over the rice, cover tightly, and cook on very low heat until the rice is fully tender and aromatic.

    Let the biryani rest off the heat for a few minutes, then fluff gently before serving.
