Dough

- 5gSalt
- 45mlVegetable Oil
- 140mlWater
Filling
- 450gPotato (cut into cubes)

- 150gGreen Peas
- 3gCumin Seeds
- 2gTurmeric Powder
- 3gChili Powder
- 4gCoriander Powder
- 3gGaram Masala
- 6gSalt
- 20mlVegetable Oil

Method
Follow each step in order. Ingredient names are highlighted as you go.

Combine the all-purpose flour and salt in a bowl.

Rub the vegetable oil into the flour until sandy, add the water, and knead into a firm dough. Cover and rest for 30 minutes.

Boil the potato in the water until tender, then drain and mash roughly.

Heat the vegetable oil in a pan, add the cumin seeds, and cook until fragrant.

Add the green peas, turmeric powder, chili powder, coriander powder, garam masala, salt, and potato. Cook until well seasoned and fairly dry, then cool.

Roll the dough into thin rounds, cut and shape them into cones, add filling, and seal the edges well.

Heat the vegetable oil to 170°C (340°F). Fry in batches until deep golden, crisp, and hot through, then drain.
