    Cod (finely chopped)
  • 1pcs
    Egg (lightly beaten)
  • 100ml
    Whole Milk
  • 4g
    Salt

Sauce

  • 50g
    Unsalted Butter
  • 50g
    All-Purpose Flour
  • 250ml
    Whole Milk
  • 6g

    Mix the cod, egg, whole milk, salt, and white pepper until evenly combined and sticky.

    Shape the mixture into evenly sized balls with wet hands.

    Bring the water just below a simmer.

    Slip in the fish balls and poach gently until firm and the centers reach 63°C (145°F), then lift them out and keep warm.

    Melt the unsalted butter over medium heat and whisk in the all-purpose flour until smooth.
