Method
Follow each step in order. Ingredient names are highlighted as you go.

Cover the red beans with the water, bring to a full rolling boil, and boil for 30 minutes. Reduce the heat and simmer until tender, then drain well and mash.

Heat the vegetable oil in a skillet over medium heat. Cook the onion until soft, add the garlic, then stir in the mashed red beans and salt. Cook until creamy and thick.

Bring the water to a boil, add the white rice, cover, and cook over low heat until tender. Rest covered, then fluff.

Season the top loin beef steak with the salt and black pepper. Heat the vegetable oil in a skillet and sear the steak to at least 63°C (145°F). Rest for 3 minutes, then slice.

Heat the vegetable oil to 175°C (350°F) and fry in batches until golden and tender. Drain well.

Heat the vegetable oil in a skillet and cook until the white and yolk are set and the centre reaches 71°C (160°F).

Plate the steak with the white rice, beans, plantains, and eggs. Add the avocado, queso seco cheese, and sour cream.
