Soup
- 500gConch Meat (cut into bite-size pieces)
- 800mlCoconut Milk
- 700mlFish Stock
- 400gCassava Root (sweet variety, peeled thickly and cut into chunks)
- 2pcsPlantain (peeled and sliced)
- 120gOnion (finely chopped)
- 150gBell Pepper (chopped)
- 10gGarlic (crushed)
- 1pcsHabanero Chili (left whole)
- 8gSalt
- 2gBlack Pepper

- 20gCulantro (finely chopped)
- 1pcsLime (cut into wedges)

Method

Bring the fish stock to a gentle boil in a large pot. Add the cassava root and cook until it begins to soften.

Add the plantains and continue cooking until both the cassava root and plantains are nearly tender.

Stir in the onion, bell pepper, and garlic and simmer until softened.

Pour in the coconut milk, add the whole habanero chili, and season with the salt and black pepper. Keep the soup at a gentle simmer.

Add the conch meat and cook only until tender and the pieces reach 63°C (145°F); prolonged hard boiling can make conch tough.

Remove the habanero chili. Ladle into bowls, finish with the culantro, and serve with the lime wedges.
