Method
Follow each step in order. Ingredient names are highlighted as you go.

Mix the all-purpose flour, baking powder, and the salt in a bowl. Rub in the vegetable oil, then add the warm water and knead until smooth. Cover and rest until relaxed.

Divide the dough into equal pieces and shape them into balls. Roll each one into a round about 3 mm (1/8-inch) thick.

Cook the dough rounds on a hot dry griddle over medium heat, turning once, until puffed in places and cooked through with brown spots on both sides. Keep them wrapped in a clean towel.

Heat the vegetable oil in a skillet over medium heat. Cook the onion until soft, then stir in the garlic and cook briefly.

Add the mashed red beans and salt. Cook, stirring, until the beans are thick, smooth, and spreadable.

Open each warm flatbread, spread in the bean filling, add the sour cream, and finish with the crumbled queso seco cheese. Fold and serve warm.
