    Heat the vegetable oil in a large pot over medium heat. Add the onion, scallion, and garlic, and cook until softened.

    Add the beef shoulder and cook until lightly browned on the outside.

    Stir in the tomato paste and cook briefly to deepen its flavor.

    Add the eggplant, green cabbage, carrot, green beans, spinach, fresh thyme, and fresh parsley.

    Pour in the beef stock and bring to a gentle simmer.

    Cover and cook until the beef shoulder is very tender and the vegetables are soft enough to mash lightly into the broth.
