Method

Heat the vegetable oil in a pan over medium heat. Add the onion, scallion, and garlic, and cook until softened.

Add the ground beef and cook until browned, breaking it up as it cooks.

Stir in the tomato paste, paprika, chili powder, fresh thyme, salt, and black pepper. Cook until the ground beef reaches 71°C (160°F) and the filling is fairly dry, then cool it promptly.

Roll out the puff pastry and cut it into equal pieces.

Place some filling on each piece of puff pastry, brush the edges with the egg, fold over, and seal well.

Bake at 200°C (400°F) until the puff pastry is deep golden and the filling is piping hot.
