- 600gPumpkin (peeled and cut into chunks)
- 150gOnion (finely chopped)
- 15gGarlic (crushed)
- 120gLeek (thinly sliced)
- 150gCarrot (cut into thin strips)
- 120gCelery (finely chopped)
- 250gPotato (peeled and cut into chunks)

- 900mlBeef Stock
- 400mlWater
- 30mlVegetable Oil
- 120gMacaroni Pasta

Method

Season the beef shoulder with the salt and black pepper.

Heat the vegetable oil in a large heavy pot over medium-high heat. Brown the beef in batches, then return all of it to the pot.

Add the onion, garlic, leek, fresh thyme, bay leaf, clove, and pumpkin. Pour in the beef stock and water and bring to a boil.

Reduce to a gentle simmer, cover partially, and cook until the beef is tender and the pumpkin is soft, about 1 and a half to 2 hours.

Lift out the beef, bay leaf, and clove. Blend the pumpkin and broth until smooth with an immersion blender, keeping the hot liquid below the blender maximum-fill line. Return the beef to the pot.

Add the carrot, celery, potato, and macaroni pasta. Simmer until the vegetables and pasta are tender, about 15 to 20 minutes.

Stir in the lime juice. Taste and adjust the salt and black pepper, then serve hot.
