    Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.

    Add the beef brisket and cook until lightly browned.

    Pour in the beef stock and water and bring to a gentle simmer.

    Add the plantain, yam, sweet potato, carrot, celery, green cabbage, fresh thyme, fresh parsley, and scotch bonnet chili.

    Cover and cook until the beef brisket is tender and the vegetables are soft but still holding their shape.

    Remove the scotch bonnet chili, then season the stew with the salt, black pepper, and lime juice before serving.
