Method
Follow each step in order. Ingredient names are highlighted as you go.

Drain the soaked pigeon peas, cover them with the water, and bring to a full boil. Boil for 10 minutes, then simmer until nearly tender.

Place the salted beef in a saucepan, cover with the cold water, and bring to a boil. Drain; repeat the blanching with fresh water only if the meat remains very salty.

Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until softened, then stir in the garlic and fresh thyme.

Add the salted beef and smoked sausage and cook until lightly browned.

Stir in the white rice, then add the cooked pigeon peas with their liquid, coconut milk, water, black pepper, and salt.

Bring to a boil, reduce the heat to low, cover, and cook until the white rice is tender and the liquid is absorbed.

Rest the pot covered, then fluff gently and serve piping hot.
