- 900mlFish Stock

Method

Heat the vegetable oil in a heavy pot over medium heat. Add the onion and cook until translucent.

Add the garlic, red bell pepper, and piri piri chili and cook until fragrant and softened.

Stir in the tomato paste and cook until slightly darkened, then add the tomato and simmer until a thick sauce forms.

Add the white rice, fish stock, bay leaves, salt, and black pepper to the sauce and stir well.

Lay the tilapia over the rice, cover, and cook gently until the rice is tender and the thickest part of the fish reaches 63°C (145°F).

Rest the pot off the heat for a few minutes, then fluff the rice gently around the fish and serve.
