- 3gCinnamon Powder

Method

Mash the black beans until smooth, then cook them over low heat with the white sugar, cinnamon powder, and cocoa powder until thick and spreadable. Let the filling cool.

Simmer the plantains in the water until very tender. Drain, peel, and mash with the salt until smooth.

Shape portions of plantain dough in your hand, add a spoonful of filling, and close the dough around it to form compact fritters.

Heat the vegetable oil to 175°C (347°F).

Fry the fritters until evenly golden, turning as needed. Drain on paper and serve warm.
