- 450gTomatillo
- 140gOnion (roughly chopped)
- 12gGarlic (peeled)
- 45gFresh Coriander (roughly chopped)
- 45gPumpkin Seeds
- 20gGreen Chili (stemmed)

- 300gWhite Rice (rinsed)

Method

Season the chicken thigh with the salt and black pepper. Heat the vegetable oil in a heavy pot and brown the chicken on both sides.

Pour in the chicken stock and simmer until the chicken is partly tender.

Toast the pumpkin seeds in a dry pan until fragrant.

Simmer the tomatillo and green chili until softened, then drain.

Blend the tomatillo, green chili, pumpkin seeds, onion, garlic, and fresh coriander until smooth.

Pour the sauce over the chicken thigh and simmer until the meat reaches 74°C (165°F) and the sauce lightly coats it.

Bring the water to a boil, add the white rice, cover, and cook over low heat until tender.

Serve the jocón with the rice.
