    Pat the arctic char dry and season it with the salt and black pepper.

    Melt the unsalted butter in a skillet over medium heat.

    Place the arctic char in the pan and cook until the first side is golden, then turn and continue until the thickest part reaches 63°C (145°F) and flakes easily.

    Lower the heat and stir the mustard into the butter in the pan, spooning it over the arctic char.
