Method

Place the chicken drumstick in a pot with the chicken stock and water, then bring to a boil at 100°C (212°F).

Reduce to a gentle simmer at about 95°C (203°F), skim if needed, and cook until the chicken begins to soften.

Add the onion, tomato, garlic, fresh ginger, and habanero chili, and continue simmering until the vegetables are soft.

Stir in the tomato paste and cook for a few minutes to deepen the flavor.

Whisk the peanut paste with a little hot broth until smooth, then return it to the pot and stir well.

Simmer gently at about 95°C (203°F) until the soup thickens slightly and the chicken drumstick is fully tender.

Season with the salt, remove the habanero chili if you prefer a milder soup, and serve hot.
