- 700gTilapia (cut into serving pieces)
- 180gOnion (roughly chopped)
- 400gTomato (roughly chopped)
- 10gGarlic (crushed)
- 15gFresh Ginger (crushed)
- 1pcsScotch Bonnet Chili (whole)
- 900mlFish Stock
- 300mlWater
- 9gSalt

Method

Bring the fish stock and water to a boil at 100°C (212°F) in a pot.

Add the onion, tomato, garlic, fresh ginger, and scotch bonnet chili.

Reduce to a gentle simmer at about 95°C (203°F) and cook until the vegetables are very soft and the broth is fragrant.

Season the broth with the salt.

Add the tilapia and simmer gently at about 90°C (194°F) until the fish is just cooked and flakes easily.

Serve hot, with some of the softened vegetables in each bowl.
