Method

Combine the cowpeas and water in a pot. Bring to a boil, then simmer until tender. Drain well.

Warm the red palm oil in a pot. Add the onion and cook until softened, then stir in the garlic, fresh ginger, and scotch bonnet chili.

Add the tomato and tomato paste and cook until thick and the oil begins to separate.

Stir in the cooked cowpeas, water, and salt. Simmer until the stew is rich and spoonable.

Heat the vegetable oil to 175°C (347°F) and fry the plantain in batches until deep golden and tender.
