Method

Bring the water to a boil and blanch the spinach just until wilted. Drain well, cool, and squeeze out as much moisture as possible.

Finely chop or grind the spinach, then mix it with the ground walnuts, garlic, fresh coriander, distilled white vinegar, blue fenugreek, dried marigold petals, salt, and black pepper.

Mix until the spread is smooth and well seasoned, then chill until firm enough to shape.
