- 400gRed Kidney Bean (soaked overnight)
- 1.5lWater
- 200gOnion (finely chopped)
- 10gGarlic (minced)
- 30mlSunflower Oil
- 2gDried Savory
- 1gBlue Fenugreek
- 1gDried Marigold Petals (crumbled)
- 100mlPomegranate Juice
- 8gSalt
- 2gBlack Pepper
- 15gFresh Coriander (finely chopped)

Method

Drain and rinse the soaked red kidney beans and place them in a pot with fresh water. Boil vigorously for at least 10 minutes, then reduce to a simmer and cook until very tender.

In a separate pan, heat the sunflower oil and cook the onion until soft. Add the garlic, dried savory, blue fenugreek, and dried marigold petals, and cook briefly until fragrant.

Stir the onion mixture into the beans. Mash some of the beans against the side of the pot so the stew becomes thick and creamy while some beans stay whole.

Season with salt and black pepper, then stir in the pomegranate juice and simmer briefly so the flavors come together.
