Millet
- 360gMillet (rinsed)
- 500mlWater
Sauce
- 260gOkra (finely chopped)
- 220gSpinach (roughly chopped)
- 260gSmoked Fish (flaked)
- 200gTomato (finely chopped)
- 200gOnion (finely chopped)
- 40mlPalm Oil
- 700mlWater
- 10gSalt
- 4gBlack Pepper

Method

Combine the millet and water in a saucepan and bring to a simmer.

Cover, reduce the heat to low, and cook until the water is absorbed and the millet is tender. Rest it covered, then fluff with a fork.

Heat the palm oil in a pot over medium heat. Add the onion and cook until soft.

Stir in the tomato and cook until it breaks down.

Add the smoked fish and water and simmer briefly to build the broth.

Stir in the okra, spinach, salt, and black pepper. Cook gently until the okra thickens the sauce and the spinach is tender.

Serve the sauce over the millet.
