    Pat the chicken dry and season it with the salt and black pepper.

    Melt the unsalted butter in a heavy pot over medium heat. Add the bacon and cook until lightly browned. Remove it with a spoon and set it aside.

    Brown the chicken pieces well on both sides, working in batches if needed. Transfer the browned chicken to a plate.

    Add the onion, carrot, and celery to the pot and cook until softened. Stir in the garlic and cook briefly, just until fragrant.

    Sprinkle in the all-purpose flour and stir until the vegetables are lightly coated.

    Pour in the red dry wine and chicken stock, scraping the pot to release the browned bits. Return the bacon and whole chicken to the pot, then add the bay leaves and fresh thyme.

    Bring to a gentle simmer, cover, and cook over low heat until the sauce is flavorful and the thickest chicken pieces reach 74°C (165°F).

    Stir in the mushroom and continue cooking uncovered until the mushrooms are tender and the sauce is slightly reduced.

    Remove the bay leaves and fresh thyme stems if needed. Finish with the fresh parsley and serve hot.
