Madeleines au BeurreButter Madeleines

These small shell-shaped cakes have a tender sponge crumb, a delicate citrus perfume, and the signature hump of a well-made madeleine. They are best eaten the day they are baked, slightly warm or just cooled.

8 steps
  1. 01

Brush a madeleine pan lightly with the melted unsalted butter. Refrigerate the pan while making the batter.

  2. 02

Whisk the eggs and white sugar until pale and slightly thickened.

  3. 03

Whisk in the vanilla extract and lemon peel.

  4. 04

Sift in the all-purpose flour, baking powder, and salt, then fold until no dry streaks remain.

  5. 05

Fold in the melted and cooled butter until the batter is smooth. Cover and refrigerate for 30 minutes.

  6. 06

Preheat the oven to 200°C (400°F). Spoon the batter into the chilled pan, filling each mold about three-quarters full.

  7. 07

Bake for 10 to 12 minutes, until the madeleines rise and the edges are lightly golden.

  8. 08

Unmold and cool slightly before serving.
