- 200mlWhole Milk (warmed)

Method
Follow each step in order. Ingredient names are highlighted as you go.

Melt the unsalted butter in a wide pan over medium-high heat. Add the onion and cook until softened.

Add the reindeer and cook until the meat loses its raw color and starts to brown at the edges.

Stir in the juniper berry, salt, and black pepper. Pour in the meat stock, lower the heat, cover, and simmer gently until the meat is tender and the liquid has reduced to a light sauce.

Cook the potato in salted water until very tender. Drain well.

Mash the potato with the salted butter, warmed whole milk, and salt until smooth.

Serve the reindeer over or beside the mashed potatoes, with the lingonberry jam on the side.
