Meatballs

- 100mlWhole Milk
- 300gGround Beef
- 300gGround Pork
- 120gOnion (finely chopped)

Sauce
- 40gUnsalted Butter
- 20gAll-Purpose Flour
- 500mlBeef Stock
- 150mlHeavy Cream
- 1gBlack Pepper
Potatoes
- 700gPotato (peeled and cut into chunks)
- 100mlWhole Milk (warmed)
- 40gSalted Butter

Method
Follow each step in order. Ingredient names are highlighted as you go.

Soak the breadcrumbs in the whole milk for a few minutes until softened.

Add the ground beef, ground pork, onion, egg, salt, white pepper, and allspice. Mix gently until evenly combined, then shape into small meatballs.

Melt the unsalted butter in a large skillet over medium heat. Brown the meatballs on all sides and continue cooking until their centers reach 71°C (160°F). Transfer them to a plate.

Stir the all-purpose flour into the pan and cook briefly. Gradually whisk in the beef stock until smooth, then simmer until slightly thickened.

Stir in the heavy cream and black pepper, then return the meatballs to the pan and warm them through gently.

Boil the potato until tender, then drain well. Mash with the warmed whole milk, salted butter, and salt until smooth.

Serve the meatballs with the mashed potatoes and plenty of brown sauce.
