- 120gPalm Sugar (crushed)

Method

Preheat the oven to 180°C (350°F).

Combine the pumpkin, cassava root, coconut milk, palm sugar, vanilla extract, and salt in a bowl and mix into a thick batter.

Soften the banana leaves so they fold easily, then divide the pudding mixture between the leaves.

Fold the banana leaves into tight parcels and place them seam-side down in a baking dish.
