Heat the oven to 220°C (425°F).

Spread the potato, carrot, and onion on a roasting tray and toss with the extra virgin olive oil, sea salt, and black pepper.

Set the trout on top of the vegetables and drizzle with the lemon juice.

Roast until the trout flakes easily and reaches 63°C (145°F), and the potatoes are tender and browned at the edges.

Sprinkle with the fresh dill and serve immediately.
