Tvøst og spik is a longstanding Faroese preparation of pilot whale meat and blubber with potatoes. Pilot whale products can contain high levels of mercury and persistent pollutants, so only legally obtained food should be used and current Faroese consumption guidance must be followed; people who are pregnant, breastfeeding, or planning pregnancy should avoid it.

- 800gWhale (legally sourced pilot whale meat, rinsed)
- 200gWhale Blubber (rinsed)
- 800gPotato (peeled)
- 10gSea Salt
- 2.5lWater
- 40gMustard

Method

Bring the water to a gentle boil in a large pot and add the sea salt.

Add the whale meat, lower the heat, and simmer gently until tender.

Add the potato and continue cooking until the potatoes are tender all the way through.

Add the whale blubber during the last part of cooking so it heats through without becoming tough.

Drain everything well and arrange the whale, whale blubber, and potato on a serving platter.

Serve hot with the mustard on the side.
