    Squid Tubes (cut into rings)

    Onion (finely chopped)

    Garlic (crushed)

    Tomato (chopped)

    White Dry Wine

    Heat the extra virgin olive oil in a pot over medium heat. Add the onion and cook until soft, then stir in the garlic and cook briefly.

    Add the tomato paste, paprika, and dried oregano and stir until fragrant.

    Add the tomato, white dry wine, bay leaf, salt, and black pepper. Simmer until the tomatoes break down and the sauce thickens slightly.

    Add the squid tubes and cook gently until just tender and infused with the sauce. Remove the bay leaf.

    Bring the water to a boil in a separate saucepan. Add the white rice, reduce the heat to low, cover, and cook until the grains are tender and the liquid is absorbed.

    Serve the stew over the rice.
