- 200gOnion (finely chopped)
- 10gGarlic (crushed)
- 150gLeek (sliced)
- 250gCarrot (cut into thick rounds)
- 500gPotato (peeled and cut into chunks)
- 30gAll-Purpose Flour
- 900mlLamb Stock
- 30mlExtra Virgin Olive Oil
- 2pcsBay Leaf

Method

Preheat the oven to 160°C (320°F).

Heat the extra virgin olive oil in a heavy oven-safe pot over medium-high heat. Brown the lamb shoulder well on all sides, then transfer it to a plate.

Reduce the heat to medium. Add the onion, garlic, and leek, and cook until softened and lightly golden.

Stir in the all-purpose flour and cook briefly so it loses its raw taste.

Add the carrot and potato, then return the browned lamb shoulder to the pot.

Pour in the lamb stock and add the bay leaves, dried thyme, salt, and black pepper. Bring to a gentle simmer.

Cover the pot and bake until the lamb shoulder is very tender and the vegetables are soft, about 2 hours 30 minutes.

Remove the bay leaves, let the casserole stand for a few minutes, and serve hot.
