- 250gCarrot (diced)
- 150gCelery (diced)
- 120gPearl Barley (rinsed)
- 1.6lLamb Stock
- 2pcsBay Leaf
- 2gDried Thyme
- 12gSalt

- 20mlVegetable Oil

Method

Heat the vegetable oil in a large pot over medium-high heat. Brown the lamb shank well on all sides.

Add the onion, garlic, carrot, and celery, and cook until the onion softens.

Add the pearl barley, lamb stock, bay leaves, dried thyme, salt, and black pepper.

Bring the soup to a boil, then reduce the heat and simmer gently until the lamb shank is tender and the pearl barley is soft, about 2 hours.

Lift out the lamb shank, pull the meat from the bone, and return the meat to the soup.

Remove the bay leaves and serve hot.
