Method

Put the diddle-dee berry and water in a saucepan and simmer until the berries burst and the liquid takes on a deep color.

Strain the liquid, pressing the berries gently to extract as much flavor as possible.

Return the strained liquid to the pan and stir in the white sugar and lemon juice until the sugar fully dissolves.

Cool the cordial for no more than 2 hours, then refrigerate until thoroughly chilled.
