- 12gGarlic (crushed)
- 10gFresh Ginger (finely chopped)
- 35mlNiter Kibbeh
- 150mlWater
- 2gBlack Pepper
- 7gSalt
- 20mlLemon Juice

Method

Cook the onion in a pot over medium heat until softened.

Add the niter kibbeh, then stir in the garlic and fresh ginger until fragrant.

Add the collard greens and turn them in the aromatic mixture until they begin to wilt.

Pour in the water, cover, and simmer gently at about 95°C (203°F) until the greens are tender.

Season with the black pepper and salt.

Stir in the lemon juice just before serving.
