Steamed Fresh Maize Pap

Fresh green maize is crushed and steamed slowly to make a soft, fragrant pap with a gentle natural sweetness. Cooked above corn cobs rather than directly in water, it develops a distinct fresh-maize aroma and is served hot with savory dishes.

6 steps
  1. 01

Mix the crushed corn with the salt until evenly combined.

  2. 02

Arrange the corn cobs in the bottom of a large pot and pour in the water. Bring the water to a boil at 100°C (212°F).

  3. 03

Spoon the maize mixture on top of the corn cobs, keeping it above the water level.

  4. 04

Cover the pot tightly and steam at a steady boil until the pap is set and cooked through, about 60 to 70 minutes at 100°C (212°F).

  5. 05

Check occasionally to make sure there is still enough water in the pot, topping up with hot water if necessary.

  6. 06

    Serve the steamed pap hot.
