Method

Mix the crushed corn with the salt until evenly combined.

Arrange the corn cobs in the bottom of a large pot and pour in the water. Bring the water to a boil at 100°C (212°F).

Spoon the maize mixture on top of the corn cobs, keeping it above the water level.

Cover the pot tightly and steam at a steady boil until the pap is set and cooked through, about 60 to 70 minutes at 100°C (212°F).

Check occasionally to make sure there is still enough water in the pot, topping up with hot water if necessary.
