- 400gSamp (soaked overnight and drained)
- 250gSugar Bean (soaked overnight and drained)
- 600gBeef Bones
- 30mlVegetable Oil
- 150gOnion (finely chopped)
- 2.5lWater
- 10gSalt

Method

Heat the vegetable oil in a large heavy pot over medium heat.

Add the chopped onion and cook until softened.

Add the beef bones and cook for a few minutes until lightly browned.

Stir in the soaked samp and soaked sugar beans.

Pour in the water and bring everything to a boil at 100°C (212°F).

Reduce the heat to a very gentle simmer at about 90°C (194°F), cover, and cook until the samp and sugar beans are fully tender, about 3 1/2 to 4 hours. Stir occasionally and add more hot water if the pot looks dry.

Season with the salt near the end of cooking.
