Method

Bring the water to a boil in a clean pot.

Whisk in the cornmeal and cook over low heat for 15 to 20 minutes, stirring often, until the porridge is smooth and thin.

Transfer the porridge to a clean nonreactive container and cool until lukewarm.

Stir in the white sugar and all-purpose flour until fully combined.

Cover loosely and ferment at a moderate room temperature for 12 to 24 hours, until pleasantly sour. Discard the batch if mold develops or it smells spoiled rather than cleanly fermented.
