- 700gPork Shoulder (cut into large chunks)
- 200gPearl Barley (rinsed)
- 150gOnion (finely chopped)
- 2pcsBay Leaf
- 2gBlack Pepper
- 8gSalt
- 1.6lWater

Method

Place the pork shoulder in a heavy pot with the water and bring it to a gentle simmer over medium heat. Skim off any foam from the surface.

Add the sour cabbage, pearl barley, onion, bay leaves, black pepper, and salt.

Cover and cook at a gentle simmer until the pork shoulder is tender and the pearl barley is soft.

Stir from time to time so the pearl barley does not catch on the bottom. Add a splash of water only if the stew becomes too thick before the meat is tender.

Remove the bay leaves and serve the stew hot.
