Porridge

  • 800g
    Potato (peeled and cubed)
  • 250g
    Pearl Barley (rinsed)
  • 1.4l
    Water
  • 10g
    Salt
  • 2g
    Black Pepper
  • 40g
    Unsalted Butter

Topping

  • 200g
    Bacon (diced)
  • 150g
    Onion (finely chopped)

    Bring the water to a gentle simmer over medium heat, then add the pearl barley and cook until it begins to soften.

    Add the cubed potato, salt, and black pepper, then continue simmering gently until the pearl barley is tender and the potato is very soft.

    Mash some of the potato against the side of the pot to thicken the porridge, then stir in the unsalted butter and keep warm.
