Method

Mix the whole wheat flour, salt, and water into a smooth dough. Rest it briefly, then divide and roll it into thin rounds.

Cook the bread rounds on a hot flat pan over medium heat, about 200°C (392°F), until set and browned in spots on both sides. Tear the cooked bread into bite-size pieces and place them in a large bowl.

Warm the niter kibbeh gently and stir in the berbere until evenly mixed.

Pour the sauce over the torn bread and toss until the pieces are evenly coated.

Combine the tomatoes, onion, and lemon juice in a bowl and mix well.
