    Heat the niter kibbeh in a large pot over medium-low heat. Add the onions and cook slowly until very soft and deeply golden.

    Stir in the garlic and fresh ginger and cook until fragrant.

    Add the tomato paste and cook until it darkens slightly, then stir in the berbere.

    Add the chicken pieces and turn them in the sauce base until evenly coated.

    Pour in the water and add the salt. Bring to a gentle simmer, cover, and cook until the chicken is tender and the thickest pieces reach 74°C (165°F).

    Stir in the lemon juice, nestle in the hard-boiled eggs, and simmer for 5 minutes so they heat through and take on some of the sauce.

    Serve hot with injera or another flatbread.
